This Valentine’s day impress your date with one of these fabulous Champagne Cocktails. Here’s a few pretty simple recipes to try out. Mix up any bubbly you want with these ingredients for a twist on the classic. 

Pomegranate Sparkler: 

1 ounce chilled pomegranate juice
3 ounces chilled champagne

Pour the pomegranate juice into a glass. Slowly add champagne. Serve immediately

French 75

1 1/2 ounces VSOP cognac
1/2 ounce simple syrup
1/2 ounce fresh lemon juice
Champagne

Fill a cocktail shaker with ice. Add the cognac, simple syrup and lemon juice and shake well. Strain into a martini glass, top with sparkling wine and serve.

Champagne Mojito

3/4 cup sugar
3/4 cup water
1 1/2 cups packed mint leaves, plus 12 mint sprigs, for garnish
6 limes, cut into wedges
2 cups light rum
Cracked ice
3 cups Champagne

In a small saucepan, combine the sugar and water and cook over high heat just until the sugar has dissolved. Let cool to room temperature.
In a large pitcher, combine the sugar syrup with the mint leaves and lime wedges and muddle well with a wooden spoon. Add the rum and stir well. Strain the drink into another pitcher.
Fill tall glasses with cracked ice and pour in the drink, filling them about two-thirds full. Top with Champagne, garnish with the mint sprigs and serve.

Maraschino Sparkler

3 maraschino cherries, plus 3/4 ounce syrup from the jar
Superfine sugar
3 dashes of Angostura Bitters
2 brown sugar cubes
1/2 ounce Cherry Heering or cherry liqueur
4 ounces chilled Champagne

Moisten the outer rim of a flute with 1/2 ounce maraschino cherry syrup and coat with superfine sugar. Sprinkle the bitters over the sugar cubes. Add the Cherry Heering, maraschino cherries and the remaining 1/4 ounce of maraschino cherry syrup to the flute. Top with the Champagne and add the sugar cubes.

Gin Mix Fizz

2 ounces gin
3/4 ounce simple syrup
3/4 ounce fresh lime juice
Champagne
Sprig of mint or rosemary
Fill a cocktail shaker with ice. Add the gin, simple syrup and lime juice. Shake until chilled, then strain into a flute. Top with Champagne and garnish with the sprig of mint.

Classic Champagne Cocktail
1 sugar cube
Angostura bitters
Sparkling wine
Lemon twist for garnish
Put sugar cube in a Champagne glass. Lightly sprinkle the sugar cube with Angostura bitters and pour in enough sparkling wine to fill the glass. Garnish with a lemon twist before serving.
