This Valentine’s day impress your date with one of these fabulous Champagne Cocktails. Here’s a few pretty simple recipes to try out. Mix up any bubbly you want with these ingredients for a twist on the classic. 

Pomegranate Sparkler: 

1 ounce chilled pomegranate juice
3 ounces chilled champagne

Pour the pomegranate juice into a glass. Slowly add champagne. Serve immediately

French 75

1 1/2 ounces VSOP cognac
1/2 ounce simple syrup
1/2 ounce fresh lemon juice

Fill a cocktail shaker with ice. Add the cognac, simple syrup and lemon juice and shake well. Strain into a martini glass, top with sparkling wine and serve.

Champagne Mojito

3/4 cup sugar
3/4 cup water
1 1/2 cups packed mint leaves, plus 12 mint sprigs, for garnish
6 limes, cut into wedges
2 cups light rum
Cracked ice
3 cups Champagne

In a small saucepan, combine the sugar and water and cook over high heat just until the sugar has dissolved. Let cool to room temperature.
In a large pitcher, combine the sugar syrup with the mint leaves and lime wedges and muddle well with a wooden spoon. Add the rum and stir well. Strain the drink into another pitcher.
Fill tall glasses with cracked ice and pour in the drink, filling them about two-thirds full. Top with Champagne, garnish with the mint sprigs and serve.

Maraschino Sparkler

3 maraschino cherries, plus 3/4 ounce syrup from the jar
Superfine sugar
3 dashes of Angostura Bitters
2 brown sugar cubes
1/2 ounce Cherry Heering or cherry liqueur
4 ounces chilled Champagne

Moisten the outer rim of a flute with 1/2 ounce maraschino cherry syrup and coat with superfine sugar. Sprinkle the bitters over the sugar cubes. Add the Cherry Heering, maraschino cherries and the remaining 1/4 ounce of maraschino cherry syrup to the flute. Top with the Champagne and add the sugar cubes.

Gin Mix Fizz

2 ounces gin
3/4 ounce simple syrup
3/4 ounce fresh lime juice
Sprig of mint or rosemary
Fill a cocktail shaker with ice. Add the gin, simple syrup and lime juice. Shake until chilled, then strain into a flute. Top with Champagne and garnish with the sprig of mint.

Classic Champagne Cocktail
1 sugar cube
Angostura bitters
Sparkling wine
Lemon twist for garnish
Put sugar cube in a Champagne glass. Lightly sprinkle the sugar cube with Angostura bitters and pour in enough sparkling wine to fill the glass. Garnish with a lemon twist before serving.

Saturday night we got to host and experience a fabulous dinner in our design showroom. It was a family style feast of local culinary offerings and vintological pairings. Guests got to collaborate one-on-one with the chef to design their own 4-course menu and 4 high-end wine varietals will be hand-chosen to best accompany the meal of choice.

We have fallen in love with using pumpkins as decorations this season! One of our favorite new ways to change it up is making pumpkin terrariums. They make for a great seasonal centerpiece and is a festive way to top your table!
